Two quick things;

Gen 9:18 is when Ham is first mentioned as the father of Canaan, not when Noah is drunk. Also, the Bible does not state that all of Ham's children are cursed, just Canaan. I think it may be this way, because Ham is Noah's youngest, so he curses Ham's youngest!

Ham's son Canaan was cursed for doing something to Noah which the scriptures don't explain. God designated Canaan's land for God's chosen people, eliminating Canaan's inheritance.

Noah's great-grandson Nimrod, grandson of Ham and son of Cush, was the first person to lead a mass rebellion against God. Nimrod started mankind's false religions, which the tribes of Japheth and Shem also embraced.
